so my friend who is a baker gave me a huge bucket of egg whites (i guess the yolks get used more!) and I froze the pail as I didn't have them on my diet at the time. Also since these are from whole eggs and not the paturized kind from the store I figured it would be a good idea.

now they are on my diet and I have a giant solid brick of frozen egg whites. what's the best strategy to defrost them? Just in the fridge?

Best to thaw them in the refrigerator. Also when freezing them separate them say by 6 or 12 in separate containers or ziplock bags...makes it easier to unthaw them with the amount you need instead of all of them.

youre going to want to be cautious with those ....They are unpasteurized, salmonella city......Even in fridge they wont have a long life....

make sure to cook them well, and dont drink it

the bucket has finally completely unthawed...so far no salmonella. I am a quarter of the way through it! I'll keep you all posted!
