I am looking for some advise, but this can only and only be given from a red seal executive chef, or a chef executive chef with the proper culinary background.(in years and experience)

I also want to diversify a little by adding that a Sous Chef with Executive chef experience may also be able to help me out.
Again, if the time in years, and background in experience has been put out, then a non red seal sous chef-executive chef can also help me tremendously.

Here are some of the exclusives I need to tap onto, but not limited to:

hiring, dismissing, scheduling of employees, food cost, food control, labour/control and cutting/purchasing of products, estructure of menu, pricing of menu, recepie building, soups, food and safety training, whms.....

I don't see how the chef's lifestyle and bbing go together. It has to be one of the worst jobs out there. All the chef's I see on TV shows look downright unhealthy.

I do not see how my honor bachelor in finance has anything to do with bodybuilding?---I have been in the industry, I am and will continue to be in it.
How my girlfriends government job has anything to do with bodybuilding?--she has been an avid gym goer and her career has nothing to do with bodybuilding.
My dentist, who I am sure runs cycles from time to time also....works on teeth and pushes paper all day long. How does bodybuilding directly influence his day to day teeth operating career?

Not all careers need to be linked directly to bodybuilding, let's get reall for a second.
What makes being a chef such a "one of the worst jobs out there?" I would absolutely love to read your blab on this one:)

I do agree that if in your own way of expressing your views that chefs can endulge a little too much into food, that they tend to be over weight, work long hours, eat too much of everything...but not all chefs are fat, not all chefs are careless about their diet ---or lack off for that matter.

I made a jump in careers two years ago, this change has not changed my eating habits, has not changed my life style as a bodybuilder. I continue to bodybuild, I continue to hit the cardio machine, I continue to watch my food and be the best that I can be.

Prejudgements can be the biggest mistakes people make. If you lived in a small little world, then by all means, but give me a break here. You don't see all bodybuilders being judged to be assholes, or monkey juices---bodybuilding and its world have been long looked at as a negative drug induced world....you just passed equal judgement on people that take on the culinary world.

Yea I'm making prejudgments but IMO the bb'ing lifestyle and being a chef are like oil and water. The main point is the long hours which can run late into the night or even early morning. I worked at a chain for a few weeks in high school and had to quit as my grades went into the toilet. And on one friday I left around 5am (started at 4pm) and the sun was coming up. This brings me to my second point. I wasn't hungry while I worked, I ate before I went in and at closing after all the cleaning was done. 7-9 hours between meals. Smelling food constantly plays tricks on the brain. I also have not mentioned the high stress of the dinner hour where you can't even stop to piss. While this might not jive with some, you are lifting to look good right? When are you going to show off the bod? In the early afternoon when all your friends are working? A social life and being a chef are almost mutually exclusive. Sad, but you are working when your friends are not. It's just not a career that I would choose, but damm would I like to know how to cook like them, lol.

I have all the respect for the chef trade in the world, it's a hard job with a lot of sacrifices to be made on the personal side. There are few things more pleasurable than a well made meal, which incidentally usually leads to the #1 most fun thing to do... )

before i opened this gym/store i completed my chefs papers and worked as a chef.
gotta be one of the worst jobs ever. lol. terrible money unless u are a top dog.

Being a chef is not one of the worst jobs, I think just like with any other profession there are its ups and downs...good and bad.
Pencil pushing all day long is not easy, working with numbers in front of a screen is tiring, and hard on the body too:D

I have met chefs that are 90% fat, make no mistake they made their own beds...while others DO like to keep clean, and a few others are into sports ;)
I am not a full red seal chef, nor have any plans as far as red seal goes.

if you knew ANYTHING about the life of a kitchen worker then you would know that these guys work ungodly hours. 14-18 hour days is NOT uncommon and is not much different for a chef - a true chef.

It is very difficult to follow a BBing lifestyle and work those hours. That is why Gettin'Round made the comment he did.

That said, I think Bigpoppapump is a chef. I don't recall.

I have a friend that is a chef in a Nursing homes he makes good coin,benefit plan,pension plan,and eats when he wants to, plus Union breaks,but he said Resturant work for a chef sucks.
What's what all these questions are you getting married, i bet you are just tell us.:)

am i the only one who thinks being a chef and bbing are an excellent combination? ever heard the saying "a bodybuilder spends more time in the kitchen than in the gym"? You can eat to your hearts content all day long of the best possible foods. you might sacrifice some sleep, but if you eat enough and can still find time for training you'll be fine. bbing + chef = awesome bro!

You can eat to your hearts content all day long of the best possible foods. you might sacrifice some sleep, but if you eat enough and can still find time for training you'll be fine. bbing + chef = awesome bro!
Unless you've done it you don't know how hard it is to get in the training on a regular basis. Maybe once you hit the chef status and can make your own hours but as a grunt or even a sous chef it if going to be very difficult to get to the gym as standing on your feet for 12-18 hours a day is not an easy task.

I agree, it would be difficult (thoguh not impossible) to uphold a bb lifestyle as a chef. especially if you have your red seal.

My GF's brother-in-law is a chef de partie (line cook), basically 3rd ranked behind the executive and sous chefs, at the Air Canada Centre's Platinum Club (one of the top fine-dining restaurant's in Toronto). He cooks for everyone from the Leafs/Raptors players to the Tenenbaums. That being said, even as a 3rd ranked cook he works INSANE hours. Basically, if there is a game or event at the ACC he's working that day, even if it means 7 days a week. I've never seen him work less than 12 hours a day and usually he'll work 12-14.

Picture doing that almost every single fukkin' day. And there's more to being a chef than just cooking. Prep work from chopping veggies to marinating steaks, getting stations ready for the day, to cleaning up after the day. Think restaurants just get kitchen-bitches to clean their stations? No way. They all have to do it themselves, including Brad Long himself (yes, the same Brad Long on Restaurant Makeover on Food Network).

Ya sure, it's killer coin for him (22-25 an hour, i forget exactly what) but he's always working his ass off and we hardly see him during hockey/basketball season. He hardly has time to piss let alone eat, (and its not like he can just help himself to an $80.00 steak) so to follow a bb lifestyle at such an up-scale establishment would be virtually impossible.
