Hi CBB, I got a quick question for the chefs on the board. I'm trying to save some money and gonna start to make my own protein brownies at home. The recipe calls for "2 tablespoons of heavy whipping cream". I've never used heavy cream before, I found 35% heavy cream at my local Loblaws, do I just add 2 tbsps of heavy cream and whip it or is there another way to do this?

Ok, here's the recipe: (got it off google)

Protein brownies
----------------------

- 3 scoops of protein powder (any flavor you like)
- 2 tbsps of heavy whipping cream
- 1 whole egg
- 1 cup of water

Mix all together and pour into a microwable dish and zap for 7-8 mins or in oven for 20 mins or so. Cut into size you prefer and eat. Protein amounts per brownie all depend on your protein powder. Another thing, you can add some peanut butter on top of the brownie to top it up even more.

Heavy whipping cream *IS* 35% cream ... it's the same thing. You could probably get away with table cream which is 18%.

Thank you Mickyo613 but I've hit a plateau at 221. I upped my carb intake, didn't want to low carb too much and lose all my muscle gains + low carbing is for the dogs. You are not a very nice person to be around while cutting the carbs out of your diet. Now at 221, I'm gonna eat a normal bb'er diet, glad I lost that 53 lbs of blubber and start to add healthy weight (muscle with little fat and water). Oh yeah, I started to eat 6-7 times a day as well, small meals to keep my metabolism going. Thanks for the tip on the heavy whipping cream, the 18% table cream sounds healthier to use.

something cheap i used to do, but got sick of:

make your own beef jerky, or an untasty but high in protein equivalent.

you need to make an initial investment of like $40 for a food dehydrator at walmart.

then pick up extra lean ground beef, squish it into very thin strips like 3/10 of an inch.

there are lots of recipies on the internet for homemade beef jerky, but they call for lots and lots of soy and worchestershire sauce (plus other random spices), which i wouldn't reccomend if you're watching your sodium intake.

i tried making my own "healthy" seasoning like 3 diff times, but it all came out tasting like dried meat.

anyways, you should be able to make up to like 500gram of beef per 1 cooking session (takes bout 6-8 hrs in the dehydrator), that used to last me about a 4-5 days.

makes a great snack if you can't splurge for protein bars.

Hi Legaliz3, thanks for the suggestion. Sounds tasty and you know what, betcha $100 your beef jerky tasted better than 95% of the protein bars on the market today. Only bar I found that tasted awesome was the Detour bars, pack 30 g of protein but a box of 12 run me $35.00. Yikes.

honestly, i'm not one to go for taste, if its high in protein, ill eat it. (well, except semen :P)
everyone i gave a taste of the beef jerky to said it tasted like dirt. i didn't mind it that much, but maybe cause i was the one that made it??

i dont know where you buy your protein bars, but i get ones that are called "Protein" from Costco and they are like 14$ for a pack of like 12 . 30g protein per bar and the carbs/fat/sodium is bareable.

if you want to save money, try going to your neighborhood bb'ing store (ie. not a franchise) and buying a whole bunch (like 3-4boxes) at a time, you'll probably get a volume discount.

you can also NOT spend the money for isolate protein, regualar non-iso whey protein is 99% as effective, BUT it does tend to chunk. and if you're a girl about that, well then...

bottom line, you gotta have money to burn if you wana eat healthy, considering you're probably only using at most 35-45% of any protein you ingest unless you're on aas.

I've seen some british devonshire cream around in small jars. think it's around 35% or higher. man that would be so GOOD. however I can't justify it.

Well according to the original recipe on google, it's:

68 grams of protein (of course this varies on the protein powder you use)
520 cals
20 grams of fat
15.2 grams of carbs

Now those stats are for the whole brownie, feel free to eat it whole if you want or cut it into smaller pieces.

I don't know if there is any truth in this, but I heard that if you heat/cook the protein powder, you basically ruin it.

Does anyone know if this is true?

Basically, over-cooking protein makes it harder to digest, so you still get the same "weight" of protein but its effectivness is reduced.

Considering that whey powder is almost pure protein, i would be wary of heating it at all..


Someone took the time to answer the question and threw in some scientific mumbo jumbo:



No, it will not destroy the whey protein. Denaturing means that the structure of the whey starts to unfold (breaking of weak bonds within the structure). Because of this, it will be less biologically active, but probably the most noticable effect is that it becomes much more 'stiff.' Whenever I try cooking with it, I can certainly tell the difference in texture. However, the protein itself is not destroyed - if you put in 30g of protein, you get 30g out.

Cooking at a lower temperature may help reduce the effects of the denaturing, but whey protein is not very stable on it's own, and will denature quickly. I'd be more concerned with the texture of your baking, rather than the effects of heating whey.

When a protein is denatured, the molecule's tertiary structure is corrupted. This disruption affects the molecule's secondary (helical) structure without altering its primary structure. In other words, denaturation does not break any of the primary chemical bonds that link one amino acid to another but it changes the way the protein folds in upon itself. Denaturation occurs when proteins are exposed to strong acids or bases, high concentrations of inorganic salts, or organic solvents such as alcohol. In addition, heat or irradiation can cause denaturation. When the three-dimensional structure of the protein is disrupted, the molecule's biological activity is affected. Therefore, enzymes do not have the same catalytic function when they are denatured.

Denaturation can have many detrimental side effects. In biological systems, denatured proteins can result in illness or even death. In fact protein denaturation is linked to many diseases such as prion encephalopathies, Alzheimer's disease and dementias.

As for the stiffening, that's the result of the denatured proteins. It's gelling like pudding or jello because it's denatured. I think we all know how bio-available jello is compared to protein powder ;).

FreeBSD: i would assume protein bars are basically peanut butter with whey mixed in and shaped. there are no "pure-whey" protein bars, at least not that ive seen, and any type of protein was either like peanut butter or chocolate based. the mfg'd protein bars also contain other types of protein like casein etc, not just whey, so you get it from a variety of sources which may not be compromised by heating

Awesome post legaliz3. Hmmm, maybe I'll switch to making my own no-heating-involved protein bars. Grab a bucket of PB and mix in some whey blend.
