You guys love mashed potatoes?? But you're on keto, low carbs, or you just want to eat your veggies differently? You gotta try this out!!!

You'll need:

1 medium head cauliflower
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
50g+ of butter
1/2 teaspoon chopped fresh or dry chives, for garnish
Sea salt



Directions:


1. Cut the cauliflower, including the core, into 1-inch pieces.

2. Bring a large pot of water to a boil and salt lightly.

3. Add the cauliflower and cook over medium heat until completely tender, 20 minutes to 30 minutes.

4. Drain cauliflower in a colander. With a bowl or small plate, press on the cauliflower to remove all water. Toss the cauliflower and continue pressing out the water.

5. Transfer the cauliflower into the pot. Put the butter, parmesan, garlic, salt and mash until you like the texture.

6. When you are ready to serve, heat over low heat, stirring constantly. Stir until incorporated. Season to taste with salt, if necessary. Serve immediately and add the chives (optional)

These are unreal. Ive had them before. BETTER than mashed potatoes. And I LOVE mashed pots.

Yeah. There's more flavor/taste. It's low carbs (perfect for dieting)... what can you ask more?

Sounds good, a friend of mine makes his shepherds pie with Cauliflower in replacement of taters and he swears by it.

Are any of the ingredients optional? I'm cutting right now, and wouldn't mind losing the extra calories from butter/parmesan from it.

Well you can use low fat parmesan(15-16% fat, president choice make one) and use less or no butter
