defrost chicken breast put 8-10 in a large bowl or glass baking tray. Add 1.5 cups of soya sauce so they are really marinating and covered in it. Let sit over night.
Next day bbq and add some light garlic powder once they are on the bbq.

Marinade in Lemon juice and cilantro then BBQ or cook in oven...
another one but it's s little bit of sugar is marinating in orange juice..
Ive even marinated in Green tea!
or buy a few of those boxed chicken stock things.. and cook your chicken in it.. added sodium, no fat
(one time... I marinated chicken breast in Chery pommegranite chrystal light)

used this to marinade some steaks today. Was nice and spicy:
-2 tbsp of balsamic vinegar
-2 tbsp of lime juice
-2 tbsp of ground chili paste (sambal oelek)
let it marinade for 4 hours or so and then light up the bbq!
the vinegar has 3 g of carbs per tbsp but the others have less than a gram per serving.

seems like your over cooking your chicken if its not juicy.
I find chicken doesnt hold its marinade unlike steak.
what i do is, buy the chicken breast with skin and bone.
chop up a few cloves of garlic, then stuff the chopped garlic underneath the skin and add abit of butter if you'd like.
throw the breast in a pan cover and cook in the oven 400 degrees for around 40 minutes.
now you should have some pretty juicy chicken, and just peal the skin off and enjoy.

I wrap my chicken breasts in a tight foil packet when I bake them and they come out juicy every time.
