lower GI for sure... longer cooking time too! But nothing compared to the 1.5 plus hours it takes to cook Hulless Barley! Barley is really the perfect diet carb with a GI of 22.

I read that oatmeal is a type of grass therefore an allergenic.

Quinoa is the winner!

Interesting. How about pinto beans?

GI 39 which is good as well. lentils also good. Barley is king though. But get whole barley or hulless barley... not pearled. pearled is not whole grain anymore. still good but missing some fiber.

Ya...was talking to my Master Herbalist today and he mentioned soaking them in water over-night and then cooking them in the morning in the rice maker for less time/and or eating it raw.....dunno sounds kinda weird.

He also mentioned White tea with Green tea is very good in antioxidants. White tea has been over looked. May have a little more caffeine in though.

A nice, easy way to eat steel cut oats is this: mix one cup of uncooked oats and one of yogurt in a bowl and leave it in the fridge overnight. Mix in a cup of berries in the morning and you're good to go.

That article compares it to the instant stuff. Those pouches are loaded with sugar, so of course it would be better. But what about comparing it to just regular plain oats? And what the hell does steel cut mean anyways?

I know that Steel Cut oats and Barley are great, but what about Buckwheat? I love eating that stuff, tastes great IMO and easy to make. Just wondering how it compares to oats and barley?

Ya...thats what my guy said....maybe leaving it in the fridge over night in whatever...you get better abosorbtion or nutrients..or will have to ask him again as to why he suggested that.

quinoa, kamut, buckwheat, barley, steel cut oats. can't go wrong with any. mix it up.

rolled oats(regular normal oatmeal) is a bit more processed then steelcut oats.
