Here's a recipe my wife found on the net. I tried it tonight and it's really good. It works out to 810 calories, 108gr protein, 88gr carbs and 5gr fat.
4 cups whole wheat penne pasta
1 small onion finely chopped
3 cans (170gr) flaked tuna drained
2 cans low fat mushroom soup undiluted
1 can drained sliced mushrooms
1/2 cup 0% fat mayo
1 cup 1% milk
1 tbsp mrs. dash seasoning
1/2 tsp garlic powder
1/2 tsp coarse black pepper
1 cup grated reduced fat cheese (optional)
boil pasta al dente and drain
mix tuna and chopped onion with pasta
in saucepan add milk, mushroom soup, mushrooms, mayo and seasonings on low heat until mixed
mix it all together when complete
grease 11x7 casserole dish with baking spray
pour in contents and bake at 350 degrees for 25 minutes
add cheese if desired for another 2 minutes to melt.
I ate a 1/3 of the dish tonight and my 3 year old son had a small amount. It turned out pretty good!
