My wife got me eating this stuff as of late because she has a gluten allergy, so she avoids pasta and breads. It has a texture similar to oatmeal and taste isn't too bad. So does anyone else eat this stuff and can it replace eating other carbs such as rice, w/w pasta etc? You know a little more variety. Everything I have read about it seems good, just hoping for some more feedback.

Quinoa is one of the best sources of carbs you can eat. it also has a complete amino acid profile (meaning it contains quality protein as well)

Maybe I've missed it but I don't see alot of guys/gals here mention it as part of their diet.

No they don't, most people still are stuff with oats as they are more well know and easier to find (more allergenic than quinoa for sure)

Because it's comparatively expensive.

How do you cook it?

I tried making a batch a couple weeks ago and ended up burning the shit out of it.

I made it last night in a rice cooker G2G. My wife made it in a pot on the stove ready in ten mins. Just cook it like oatmeal on the stove.

i cook it like rice, works well for me
for some flavor cook it in a chicken broth instead of water.

can also get the flour as well, my wife substitutes that into recipes all the time without issue. (bit expensive though)
