What you need:
Eye of round roast (costco sizes are pretty much the same)
Soya Sauce
Worchester Sauce
Garlic Powder (not garlic salt)
Onion powder (not onion salt)
Liquid Smoke
Pam

As for the amounts I usually eyeball, but about 1cup soya sauce, 1/2cup worchester sauce, for the powders about 2 tbsp and the liquid smoke (I dont add it often) but about 2 tbsp

Directions:
Cut off all visible fat on the outside, then place in the freezer for about a hour or two until its firm so its easier to cut. Then cut it as thinly as possible, you can try and get the butcher to cut it for you (I have yet to have success in getting it done though). Toss the meat into a ziplock baggie.

Next you gotta make your marinade so in a bowl add it all mix it up and add to the baggie, let it sit for about a hour or two or over night if you have time.

Preset your oven to the lowest possible heat setting it had mines about 170C I think. Get your pans ready spray on some pam so the jerky doesnt stick. You can use those grill things that you put cookies on to cool. But there hard to wash. Anyways toss it in the oven and cook for 8hours and then turn the jerky and toss it back in for another 5 hours.

And voila your own beef jerky. Toss it in another ziplock baggie with some paper towel and eat it up.

Ill usually buy whatever the chunk of meat that costco sells, I think there around 3lbs?? I havent done it in a couple months, but usually I fill up 4-5 baking trays

at the safeway here they sell the meat alright cut into very thin slabs to make big pieces of jerky instead of strips.. cheap to... and i leave the oven open just a crack when i cook it as well... so it cooks slower..

I recently bought a smoker from Costco and started to make my own jerky.
I've found if you have a smoker or a good BBQ there are some great low sodium recipes online.
Personally I have appetite issues but love junkfood, so my low-fat low sodium jerky has been great snacks between meals for me.
