How important really are leg extensions, I'm limited with time in the gym so i'd like to cut them out and stick with squats, dumbell lunges and sissy squats.

Leg extensions are not a needed exercise.
Why is your left leg weaker? Has it been injured? Are your hips out of alignment?
Do you have nerve issues?
How do you do a lunge two legs at a time?

i use extensions every workout.. to warm up my legs and knees

no no no you misunderstood, I do my lunges normally lol one leg at a time. Just started doing them which is how i found out my left leg was weaker.
I have never injured my left leg and no hip issues that im aware of, no clue why my right is stronger.

Well if you have no injuries holding you back, then I would start with squats and then move on to the single legged exercises after.
The reason for that is that squats are a better all around leg builder than, say, a hamstring curl, and as such you should go into the squat with as much energy as possible so that you get the most out of the movement.
In my completely unprofessional, internet opinion it sounds like you haven't done a whole lot of leg work in the past, so this is most likely a CNS issue and it should clear up relatively quickly with a large dose of heavy weight(triples and singles) and an assload of recovery time.

I've been training about 12 years, didn't do legs 9 of those years but have the last 3. I've maxed out now at 4 plates for my squat, and like I said I just started doing lunges which made me realize how weak my left leg is, so what I want is to stregthen it up as to increase my squat.

4 per side on the power rack, dont like smith squats as the movement just doesn't feel right.
