Hey guys!
Does anyone really know what cooking does to available levels of nutrition within your food? Does heating destroy some of the protein, or make it more easily absorbed by the body? Or both??
How much of the nutritional value is lost to cooking? Say eggs for example, soft boiling vs hard boiling, vs scrambling, anyone know (maybe by %) how much is lost to these methods??

im a cook by trade ive never heard of any degradation of protein due to cooking methods. certain vitamins are lost by cooking methods but not protein as far as i know. certainly no dif between soft or hard boiled or scrambled. peace

I was told too that overcooking meat or chicken does degrade the protein value. Tis why I always eat my steak medium rare!...:D Actually it just tastes better that way. No way would undercook eggs........I am not down with sloppy slimy eggs.........soft boiled is the only undercooked egg I'll eat.

i think you would really have to kill it to destroy any protein values,again i have never come accross anything in cooking methods that affects protein.i will check with dietician on this tho.
